The Role Breakdown
Gulf hotel kitchens operate on a tiered structure. Indian candidates typically enter at commis level and progress to chef de partie (CDP) within 18 - 36 months in a Gulf environment.
Commis chef / demi CDP: Entry grade. Requires hotel management diploma from NCHM-affiliated IHM or NSDC-certified catering institute, or equivalent vocational certificate. UAE, Saudi Arabia, Qatar, and Kuwait all have demand at this level in mid-market and upward properties.
Chef de partie (CDP): Minimum 3 years kitchen experience required, with Gulf kitchen experience specifically preferred by 5-star properties. CDPs earn approximately 40 - 60% more than commis grade in equivalent property types. Subject to employer contract and government approval.
Tandoor and Indian specialty chef: The one kitchen category where Indian candidates have an unambiguous preference advantage over other nationalities. Indian restaurants within 5-star properties in UAE, Bahrain, Qatar, and Oman treat tandoor and Indian specialty chefs as a distinct hire from general kitchen staff. Pastry chef / commis patisserie: Formal patisserie training is scarce among Indian hospitality graduates. What Indian Culinary Qualifications Gulf Employers Accept
NCHM-affiliated IHM graduates have strong recognition with international chain properties across the Gulf. Graduates of NCHM institutes can expect their qualifications to clear DataFlow verification without issue and to be recognised by international chain HR teams that have previously hired from these institutes.
NSDC-certified catering institutes have recognised status under the Bahrain LMRA worker pathway and increasing recognition by UAE MOHRE for hospitality quota applications. For candidates without IHM-affiliate qualifications, NSDC certification is the most reliable route to Gulf recognition at commis grade.
ITI Catering and Counter Management graduates qualify for kitchen helper and stewarding roles across all Gulf markets and for commis chef roles in mid-market (3 and 4-star) properties. 5-star properties in UAE, Qatar, and Saudi Arabia typically require IHM degree-level or equivalent for commis chef grade and above.
